Wash and dry those beautiful steaks, give them a healthy coating of sea salt then let them come to room temp for an hour on the counter. Give them one final pat down with a paper towel and add a ton of freshly cracked black pepper and a drizzle of olive oil. Let them sizzle for 4 minutes on each side and you are ready to go!
